Elastic meat netting (for hams, roasts and sausages) is an open mesh that shapes and ties meat. Stockinette is a closed knit that covers and protects a whole carcass. If you need carcass protection, you need stockinette.

Which do you need?

Whole lamb or goat: lamb stockinette. Beef sides: carcass bags. Your own cutting line: tubular rolls.
